Pour oil in large saucepan or wok.
Drain chicken from can. You can also use leftover chicken or fresh cooked chicken if you prefer.
Grab your taco seasoning. I like to make my own - look through my Snapguides to find the recipe! :-)
Rinse and drain black beans.
Halve tomatoes and chop parsley.
Place chicken in wok and stir-fry 2-3 minutes.
Add taco seasoning, sprinkling evenly.
Stir to coat well.
Add beans, tomatoes, and parsley. (Sorry about the blurry pic. I was working fast!)
Stir well until mixture is warm. Don't stir too much or beans will become mushy.
Scoop out mixture over rice. Serve and enjoy!

- 1.0 Can black beans, drained and rinsed
- 1.0 Can cooked chicken breast, cubed
- 0.0pt Cherry tomatoes, halved
- 0.0tsp Dry taco mix
- 2.0Tbsp Olive oil
- Parsley, chopped
