Cut the bitter gourd into thin slices, thickness depending on your personal preference.
Simmer the slices of bitter gourds in boiling water for a while, to displace the bitterness.
Immediately transfer to ice water. You will notice that the bitter gourd will appear to be glassy and greener than before.
Put some salt and mix well, and rinse it off with water.
Add sugar.. I know the amount of sugar here looks scary but mum insists the vinegar will help.
Pour in white vinegar to get the sour sweet taste. Leave it aside in fridge, pour away the liquid before the final step.
Sprinkle some sesame seeds, before serving. Best served cold! The slight bitterness completes all possible stimulation to our taste bud!
