Chop celery, carrots and onion and put in pan with a drop of olive oil and clove of garlic and start sauteing for about 5 minutes

Clean your shrimps and keep only the shells. Use your shrimps for some other dish...

Add your shells to the cooking pot and sauté for 5 minutes


Add tomato paste and keep stiring

Add 1/4 cup of rice

A drop of white wine

Cover the food with double the amount of cold water and simmer for 2 hours

Drain in chinois



And your bisque is ready to use...
