How to make beef enchiladas

Super easy, not authentic, very tasty recipe

I made this up as I went last night using ingredients I had on hand.

To make the enchilada sauce I mixed the tomato sauce, water, and spices in a saucepan and brought to a boil, then let it simmer while I assembled the other ingredients.

Obviously you could use canned sauce instead of making your own.

Lay out a tortilla. I used the kind from Costco that come raw and you cook yourself. So yummy!

Brown the beef. Add onions and peppers and cook until soft. Splash in some of the sauce. Add 1/8 of the mixture to the tortilla.

Stack a couple olives on top.

Roll each filled tortilla and put in the pan. I sprayed the pan with cooking spray and put a little sauce on the bottom first.  After all enchiladas are finished pour the sauce over the top.

Cook in a 350 degree oven for 30 minutes until warmed and cheese is gooey and melty.

  • 1.0 Tomato sauce (15 oz can)
  • 2.0Tbsp Chili powder
  • 1.0tsp Garlic salt
  • 1/2tsp Cumin
  • 1/4c Water
  • 8.0 Flour tortillas
  • 1.0lb Ground beef
  • 1.0c Onions, diced
  • 1/2c Bell pepper, diced
  • 1.0 Can olives, sliced
  • 2.0c Shredded cheese
  • 1.0 13x9 inch pan
