A simple dish with little or no cleaning up because you cook it in foil. Quick to assemble and no special skills needed. Perfect for a summers eve when you are knackered from work and want freshness
The ingredients
Slice the chillis into small strips
Divide up the fillet into portions
Place fillet onto silver foil
Add lemon juice and chillies
Add basil leaves chopped and cherry tomatoes drizzle with olive oil and season with salt and pepper
Ready to cook
Fold foil over top and pinch shut
Place on baking tray and heat 220 for 15 minutes
Couscous
Cooked to perfection keep in foil basket to eat
Glass of white wine essential
Yummy add couscous to the mix and enjoy
