Put about 3/4 inch of ice cream smoothed into bottom of cupcake tin freeze solid. Cut cupcakes horizontally in half. Remove the ice cream discs and sandwich them between cupcake halves.
Place into cupcake paper liners and referee. Top with frosting. I used some crushed Oreo crumbs in mine. Then cookie toppers. See other post for steps on How to make baseball cookie cupcake toppers.
