INGREDIENTS
Chop the onion, celery, and carrots. In a pan, heat 2 tbs of oil and add your veggies. Cook until onion is translucent.
Chop the garlic and toss it in with the veggies. Cook for a few minutes until fragrant.
Add the cumin and stir it into the veggies.
At this point you should have the broth boiling. You can make your broth by boiling 10 cups of water and adding vegetable or chicken bouillon, about 2 cubes.
Add the vegetables and 1 cup of barley to the broth. Bring to a boil then set flame on low and simmer for 25 minutes. Add the lentils and tomatoes and cook for 20 minutes more.
Finally roughly chop the bok choy and toss it in the pot. Cook for 5 minutes. Then take your dill, chop it and add it to the soup. Add salt and pepper to taste and you're done!
This is a hearty and filling soup. Great for cold nights! Enjoy!!!
- 1 cup of pearl barley
- 2/3 cup of lentils
- 1 1/2 cup chopped onion
- 2 celery stalks, chopped
- 2-3 carrots chopped
- 3 garlic cloves chopped
- 1 1/2 ts cumin
- 10 cups of broth
- 1/4 chopped dill
- 2 small bok choy
- 1 can diced tomatoes
- Salt & pepper to taste
