Preheat your oven to 350 degrees!
Combine the first six ingredients (through sugar) in a bowl.
Whisk together the canola oil, soy milk, and vanilla extract in a separate bowl.
Add the wet mixture to the dry ingredients.
Stir to combine.
Fold in the banana, walnuts, and dark chocolate chips.
Spray a baking sheet with non-stick cooking spray.
Scoop the dough onto pan with a small ice-cream scoop.
Bake 25 minutes or until golden brown. Let cool on wire rack.
