How to make balsamic and tarragon strawberries
This is a simple, delicious and healthy strawberry dessert. Be sure to use a high quality aged balsamic vinegar for the best flavor.

INGREDIENTS
Select fresh, ripe strawberries. I am using 2 pints today, which is a nice size dessert for 4 people. This recipe can be easily adjusted for a crowd.
Give the berries a good rinse, and then gently pat dry. Make sure to remove as much moisture as possible.
Hull the strawberries, and slice into 1/4 inch pieces.
Gather the strawberries in a medium sized metal or glass bowl.
Add 3 tablespoons of sugar.
Using a plastic spatula, gently fold the sugar in. Make sure the strawberries are evenly coated.
Slice the tarragon into small strips. Add to the bowl.
Add one teaspoon of balsamic vinegar. Gently stir. Cover the bowl, and place in the fridge for 1 to 3 hours. Remove and bring to room temperature before serving.
Spoon the berries, and the juices into a bowl or glass. Serve alone, or with a scoop of something sweet like vanilla ice cream, gelato, frozen yogurt, granita, cream, etc. Enjoy!
- 2.0pt Fresh strawberries
- 1.0tsp Balsamic vinegar, the best quality you can get!
- 3.0Tbsp Sugar
- Fresh tarragon (quantity to your preference)
