Brine your chicken. Use vinegar, salt and fill with water until your chicken is covered. I used about a cup if vinegar, and about 3-4 tablespoons of salt.

Let your chicken sit for as long as possible. At least 30 minutes. Overnight is the best though. Cover and put in your fridge.

Get your Panko and eggs. Whip the eggs up, and pour into a large storage bag. Put about 2 cups of your breadcrumbs in another.

Place about 2-3 pieces of chicken in the egg mix and shake it up. Making sure your chicken is coated.

Then, put the coated chicken in your breadcrumb bag. And Shake shake shake !!

Place on your baking sheet. Spray some PAM to make sure nothing sticks. Add your seasoning here. I don't add to the breadcrumbs cause all the seasoning will fall to the bottom of the bag.

Bake at 325 for about 35 minutes. sorry no after picture, was so good I forgot! ☺️ chicken will be crispy and amazing without all the grease!
