How to make baked eggs

The best thing to make the morning after a big long-weekend meal. Use up your leftovers and enjoy a healthy egg breakfast with the family.

INGREDIENTS

Preheat your oven to 375F and grease a small ramekin (for one). Gather your leftovers or sauté some vegetables - peppers, onions, green beans - anything goes!

Begin layering your ramekin with the "harder" veg on the bottom. ie: potatoes. I started with leftover green beans.

My next layer was onions and tomatoes and a little sprinkling of mint and cilantro. (Because my onions weren't fully cooked I also drizzled on a bit of olive oil). Keep layering with whateva you got.

I had a bag of tex mex cheese but you can get fancy and use ANY kind of cheese you like. Also! Because I didn't have any tomato chutney lying around I added a dash of hot sauce.

Lastly, crack your eggs overtop of of the layered dish and add a pinch of s+p. Pop it in the oven for about 15min (or until the whites are cooked through).
