INGREDIENTS
Line a cupcake pan with 12 liners and spray with non stick spray. Preheat oven to 350
Start layering with what you would like in your egg: cheese
Bacon
Chopped onion or any veggie. Peppers or tomatoes
I use the bacon renderings to sauté my onion in...I love the flavor of caramelized onion
Once the onion is soft and sweet, add that
Don't forget the salt and pepper
Now add the eggs. Use something sharp to puncture the yolk. Otherwise it puffs up quiet a bit. I check the eggs as they bake to make sure they aren't bubbling up.
Bake 15-20 minutes. I like my eggs well done. So if you like them more runny, start checking them at the 15 minute mark.
Unwrap and pop out! I make a dozen at a time and keep in the fridge for a quick protein for breakfast or chop and add to your salad.
