How to make baked chicken with spinach and feta
My husband and son were delighted with this dish and thought I should Snapguide it, so I did. 😄

Ingredients :)
First take your chicken breasts and slice them in half, or butterfly them, lengthwise.
Like so.
Here they are cut. Do all the breasts this way ;)
Here are all the chicken breasts halved.
Then take the halved breast piece and lay it between some plastic wrap so you can make the piece thinner.
Like so.
You will need a glass dish to lay your chicken pieces in. Now use some of your butter to coat it. You could use spray, but butter tastes better ;)
Lay your chicken piece into the dish.
Sprinkle the Johnny's seasoning liberally all over the chicken piece. Then, flip and get the other side as well.
Only do as many as will lay flat into the glass dish. Then, set aside so you can sauté the spinach for the filling.
Take a half of your butter....
and put it into a frypan. Turn your heat to medium and get the butter melted.
Now it's time to add your spinach. Add at least two cups, but more if you like :)
There's the beautiful spinach!
It's starting to wilt as it heats, so stir it around a bit.
Then add your pepper...
and salt, and any other spices of your choosing. I put some dried onion in ;)
It's now time to put your sautéed spinach on to your chicken halves.
Then sprinkle the feta all over the chicken.
Now you roll the chicken up from one end to the other....

There's three done ;)
Now you have the space to lay out more chicken halves, season them on both sides, and add some spinach and feta again until all are done.
Preheat your oven to 375F.
When your oven is ready, put your chicken into that oven for 35 minutes to bake.

If you want to make an easy side dish, this rice is just the thing!
Put 3 1/2 cups of Vegetable stock and the other half of your stick of butter, or some olive oil into a pot. Set the burner on high to bring to a boil.
When it's to a boil, add in both boxes of rice pilaf and the seasoning packets and stir.

Time to put the lid on.
Lid is on. Now turn your heat down to between 2-3 on your stove.
This is about right. Not too low or it won't steam out some of the moisture inside and properly cook the rice.
Here it is all done. I did add garlic to my rice for flavor before I put the lid on. Your choice.
Give the rice a stir ad you'll be ready to add it to the plate with the chicken. :)

- 8.0 Fresh, or thawed Chicken Breasts
- 1.0 Package of Feta
- 1.0 Package of Spinach
- 1.0 Johnny's seasoning container
- Some salt
- Some pepper
- Some garlic powder
- Some dried onion
- 1.0 Stick of butter
- 2.0 Boxes of Near East Rice Pilaf
- 1/2c Vegetable stock, for the rice
