Preheat oven to 350 degrees.
Halve tomatoes. Set aside.
Spray baking dish with cooking spray. If you have several chicken pieces, you can also use an aluminum baking pan, covered in foil and sprayed with cooking spray.
Place chicken in pan(s).
Drizzle balsamic vinegar over chicken. Add salt and pepper. Place in oven; bake for 8-10 minutes, then flip and bake an additional 8-10 min. If using thick chicken breasts, increase cooking time.
While chicken is cooking, cut mozzarella cheese into small cubes. Set aside.
Coarsely chop basil. Set aside.
Create a marinade for the tomatoes by drizzling balsamic vinegar and oil across the top. Add salt and pepper as desired.
Stir gently to coat and place in refrigerator for at least 10 minutes for flavors to blend.
When chicken is done, place on a plate and add marinated tomatoes, mozzarella and basil across the top.
