Roast the eggplant on direct flame or on coal too will do
Roast till upper skin is charred and inside its cooked and mushy
Remove the skin to revel the white flesh and keep aside
Heat oil in wok and add mustard seeds
Add cumin seeds
Add garlic. This didh needs lot of garlic
Add chopped onions
Add curry leaves
Add chilli red or green both works
Add turmeric powder
add the roasted eggplant to this
Add tomatoes to it
Add salt , cumin powder and corainder powder . Keep mixing for couple of min and your are done
Served with hot fulkas (indian flat bread)
