Open water chestnut can. Drain water. Add chestnuts to a container with a snug lid or a ziplock back. Pour soy sauce over chestnuts.
Place a lid on your container (or zip the bag) and place in the refrigerator for 24 hours, flipping the container 3-4 times.
When you are ready to cook, open your package of bacon.
Cut the slices in half.
Take water chestnuts out of refrigerator and drain liquid.
Wrap a half slice of bacon around chestnut.
Secure with a toothpick.
Place on a baking sheet covered with aluminum foil.
Place bacon wrapped chestnuts in the oven and broil until they start to brown.
Now would be a good time to take out the bubbly if you are making these for New Year's Eve. Sparkling fruit juice for the kiddos and moscato for the adults!
When bacon starts to brown, flip and return to the oven. Watch carefully as you don't want them to burn. When they look crispy on both sides, remove from oven to cool.
