Get all your supplies ready.
Thinly chop your onion and green bell pepper.
Kneed the ground chuck and flatten it out into a rectangle.
Apply a thin coat of A-1 steak sauce.
Layer the onion and green pepper.
Apply grated pepper jack cheese.
Gently lift the edge and roll.
Now it's time to make the bacon weave. Lay out five or six strips of bacon horizontally on a flat surface. Then peel back every other layer and place a piece of bacon vertically.
Repeat this process until you have a nice weave pattern of bacon.
Place the roll of ground chuck in the bacon and roll it up.
Place the roll on your grill. I'm using a charcoal grill and have offset the coals to one side. Cook for 30 minutes at 375 degrees. Then turn the roll. Cook for another 30 minutes.
After an hour of cooking layer another helping of shredded pepper jack cheese. Cook for another 30 minutes.
Remove from the grill and let it sit for 10 minutes.
Slice and serve on a roll or by itself.
