Cut melon in half. Scoop out the seeds and juice, drain juice back into the hole in the melon. Throw out the seeds.
Bacon Jam Version Heat pan with bacon jam. Scramble eggs until softly done and still moist. Turn off heat. Mix freshly chopped chives into eggs.
Fresh Bacon Version Fry finely chopped bacon in pan. Scramble eggs with a pinch of brown sugar with the bacon until softly done and still moist. Turn off heat. Mix freshly chopped chives into eggs.
Load up the melon bowl with your delicious scramble and serve with a spoon.
