Roast the egg plant on flame till soft inside and peel off the charred skin and mix with mince garlic
Add tahini paste to it . (Tahini paste is roasted sesame seeds ground into a fine paste using olive oil. )
Toast some sesame seeds to be added to the mix . Toast them till they just start poping.
Add salt , pepper and lemon juice to it
Mix it very well to a paste like consistency
Finally add some olive oil
Have it with pita bread
