Wash some chicken wings and pat dry . Place on a sheet of foil.
Form an envelope with the foil and double fold the ends. The wings will be steamed first and the liquid should stay inside the foil packet to cook them.
Prepare a steamer (this is made of bamboo) and place the foil packet in. Make sure the folds face up so the liquid stays in as it steams. Cover the steamer and place on top of a pot of boiling water.

Arrange the wings in a baking tray and brush with jerk seasoning. Bake in an 350 degree oven for 45 minutes or until cooked. Do not roast because the seasoning will burn.
To serve, spoon the sauce over the wings. Can be eaten hot or room temperature. It also goes great with baked pasta!
