I like to first get everything together and ready. So I like to go ahead and cut the lettuce and wash it and put it to the side.
Chop lettuce
Wash lettuce
Then I take the Guajilo peppers and wash them, I take the stem and the seeds out. I like to let them sit in hot water to soften them up. I then put them into the blender.
Soak the peppers
In the blender I add the onion salt and about a half a cup of water. I then blend it into a sauce. The sauce will need to be strained to get the chunks out of the sauce.

It is then added to one of the cooking pans. It needed to come to a boil, and then set on low.
Heat till bubbles then set on low
In the other cooking pan, you add oil and put on high. Once it is hot, you can set it on medium and begin to cook your corn tortillas. Set them aside as you cook the desired amount needed.

Once the tortillas are cooked you simply put them in your pan of sauce and coat both sides.

After your tortillas are coated you add the cheese on the inside and roll them up. You can add extra sauce to them if you wish.

Roll into enchilada
You then take the lettuce that was set aside earlier and top your now finished enchiladas. And enjoy......
