Wash zucchini and cut off the ends.
Cut in half long-wise.
Scoop out the seeds. Even if there are not many this is needed to make grooves to hold the butter and cheese.
Salt (kosher salt is preferred). Auntie Rulie says kosher salt is more mellow so you might need a bit more than regular salt but it tastes better. The flavor is not as sharp.
Pepper to taste. Preheat the oven to 425 degrees or fire up the grill.
Melt half a stick of butter in the microwave.
Fill the little grooves in the zucchini with melted butter.
Top that with grated Parmesan cheese. Using a spoon, gently push it off the spoon to get a thin even layer.
Top each with shredded Parmesan cheese.
Make grooves down the center of the cheese. If you can't find anything long and skinny, just use the back of your finger nail.
Fill the grooves with more butter!
Put the zucchini on the grill and cook for about 20 mins. In the oven it will need about 20 mins at 425 (rotate halfway).
Sit back and have a beer. Preferably labeled with your shorten grandma name. 'G' for grandma and 'moto' for the end of her last name. G-moto would be her rapper name if she had a rap career!
If you can poke it with a skewer and if goes through with little pressure it's done! Don't to overcook it!

- 1/2c Shredded Parmesan cheese
