Leave rind on, cut lemon in small chunks. Remove the ends & seeds. In a blender or food processor, mix lemon chunks, eggs, butter, vanilla & sugar until mixture is smooth and creamy. Should be runny
Pour into unbaked piecrust. Bake at 350 degrees for about 40 minutes. If crust becomes too brown, cover gently with foil and finish baking.
Cool on counter or in fridge, serve with whipped cream of your choice. The pie is sweet so you do not need very sweet whipped cream. So delish & easy for entertaining. Great for Pot lucks too!
- 1.0 large lemon rind and all.
- 4.0 eggs
- 1.0 Stick BUTTER
- 1.0c sugar or substitute of your choise
- 1.0Tbsp real vanilla
- 1.0 unbaked pie crust
- 1.0 can of whipped cream (or fresh made)
