Preheat oven to 350* & line a muffin pan w/ cupcake liners. In a mixing bowl mix together flour, baking powder & salt.
In another bowl mix together brown sugar, coconut milk, applesauce, oil & vanilla.
Add wet ingredients to dry ingredients & blend until just combined & then fold in the apples being careful not to over stir.
Spoon mix into cupcake liners.
Bake for 15 mins or until the bounces back after being lightly pressed. Let cool in muffin pan for about 15 mins before removing. Enjoy w/ nice cold glass Chocolate Almond Milk!

- 6.0Tbsp Whole Fat Coconut Milk
- 6.0Tbsp Applesauce
- 2.0Tbsp Oil
- 1/2tsp Vanilla
- 1.0 Small apple, peeled, cored
- & finely diced
