Gather your ingredients. You can use a variety of apples like Fuji, gala, Granny Smith (add a little more sugar), etc. Sorry this picture is horrible.
Peel, core and chop your apples. The shape does not matter as much as the size. Smaller sizes cook faster than larger ones.
Using a food processor makes quicker work of the chopping. But a knife and cutting board can do the same job. Use what you have available.
In a bowl, add your sugar and spices. Feel free to adjust the amounts or even add different spices for a unique flavor.
Mix your chopped apples and spices in a large bowl. Toss to coat.
Pour apples into your crock pot and cook on high for 10 hours or 2 hours on high and then low for 12 to 14 hours. Just check often to make sure the apples don't burn. (It's really nasty, trust me.)
Give them a stir about every 1 to 1.5 hours to prevent burning and sticking. This is at 5 hours.
At the end of 10 hours, the apples should look very brown, soft and slightly watery.
I use an emulsion blender to purée the apples. You can also use a blender or food processor.
You can refrigerate this for several weeks as long as it's in an air tight container. Or.... Can it for longer shelf life. See next step.
To can apple butter, pour hot apple butter in clean jars. Microwave for 20 sec, until bubbly. Carefully place the lid and ring on and secure. Let sit at room temp until lid pops. Store up to 1 yr.
