Cut up meats or veggies you want with your eggs. I had mushrooms, spinach and jalapeño on hand today.
Cook veggies or meat with some butter
More veggies (spinach cooks much faster than the rest, so I added it last.
Put some more butter down so the eggs won't stick. Crack eggs over veggies (make sure not to break the yolk like I did!)
Carefully flip eggs over to cook other side. Then place cheese of choice on top
Place another pan or lid over eggs to melt the cheese
And you are done with plate of ooey gooey yolkness that an omelette or scramble can't deliver
