Mix together five eggs, any breakfast meat, salt & pepper. Scoop into cupcake sheets.
I used 5 eggs and I had leftovers.
Once the eggs are in the cupcake sheets, add cheese. I prefer doing it this way. Otherwise the cheese settles at the bottom of the bowl.
Bake on 400 for 13-15 minutes. Use a toothpick just like with cupcakes, to see if the omelets are done. (It's not pretty, but it's pretty tasty) :)
Serve. I love this breakfast dish because there's not much to clean afterwards. :)
