Gather your ingredients
Use a mandoline to thinly slice your purple potatoes.
Here they are shown thinly sliced. Make sure they aren't too thick or they won't cook through.sprinkle with a little kosher salt.
Repeat process with the yellow squash.
If they are too thick, they won't cook trough in the oven before the cheese melts. sprinkle the squash with a pinch of kosher salt.
Slice stems of broccoli and break the broccoli apart into little pieces.
Lightly brush the pizza stone with a light coat of olive oil. Next, brush a coat of olive oil onto the pizza.
Add some freshly grated mozzarella.
Thinly slice your olives.
Start to make your Olympic rings. Place your purple potatoes onto the pizza.Once the pizza cooks, the potatoes will take on a blueish color.
Repeat making your rings with the rest of the ingredients.
Lightly brush the potatoes, squash and broccoli with a light coat of olive oil. You can also add a pinch of salt over the the vegetables.
Bake at 450 degrees for 15-20 min or until golden brown.

- 1 pizza crust
- 3 purple potatoes
- 1 bunch broccoli
- 1can black olives
- 1.0 1 yellow squash
- 1.0 Jar pep padre or 15 cherry tomatoes
- 1.0 2 tablespoons olive oil
- 1.0 Mandoline
- 1.0 Pizza stone
- 2 cups freshly grated mozzarella
