I don't give many quantities for ingredients because this is a very casual, loose recipe and amounts don't really matter. Just add some stuff, be lazy, don't measure. Make it all fit in the pot.
Coarsely chop an onion and add it to large crockpot
Add 1-2 packages of chicken. I like to use organic, boneless, skinless thighs.
Add coarsely chopped organic celery.
Add lazily chopped organic carrots.
You can make many versions of this dish by varying the ingredients. One version I like uses organic red sweet potato, black beans, half a jar of salsa verde and cumin. Turns out like a ranchero style.
I also like a version with chickpeas, curry and sweet potato. Have fun adding or subtracting veggies, beans and spices to play and experiment. Adding 1/2 to 1 tsp salt is always optional.
You could use, chopped squash, and add ground sage for a holiday stuffing style taste. Frozen peas also make a good veggie addition. General rule for spices: 1 tsp each
Stir up the pot, then add up to a half cup of water. I usually just add a splash.
Cover slow cooker and set on low for 8 hours. Walk away.
Add greens like kale 5-10 mins before pot is done. Place them on top, do not mix in.
Put lid back on and allow to steam for another 10-15 mins.
Mix in the greens and as you stir, the chicken will shred. Perfection.
Most versions of this shredded meal make good fillings for potatoes, tortillas, or lettuce wraps. It's a good clean meal you can reheat and eat different ways throughout the week. Be healthy xo
