It might be thought of as strange to dress a fruit salad as you might do a green salad but this really brings out the flavours. These are higher sugar fruits so higher in calories and carb than some
Serves 2. Mix the juice and zest of one lime with a little chopped red chilli (to taste), 1/2 tsp lemongrass paste, a sprig of mint chopped, 1/4 tsp grated ginger and your favourite natural sweetener
Chop up 1/4 pineapple, 1/4 melon and 1 orange and place in a bowl (you can substitute the fruit for any tropical fruit you have)
Pour over the dressing and toss. If you want to serve this as a refreshing dessert you can slice the fruit more thinly and lay on a platter with the dressing poured over.
