INGREDIENTS
Pick your eggplants (choose 3)
Take the top part off
Slice the eggplants 1cm thick
Thickness to aim for...
Mix the Panko, Parmesan, salt and pepper, onion powder and garlic salt .
Whisk the eggs and cream
Prepare the station to coat the eggplant (have a bowl of flour as well) and have a baking sheet to place the coated egg plants
First, cover eggplant in flour
Then cover the eggplant in egg wash
Transfer the soaked eggplant into Panko bowl and cover with the breadcrumb mix
Place on a baking sheet
Until finished!
Heat oil in a pan, and place eggplants in the hot oil
Get some tongs!
When golden brown flip to the next side. About 2 minutes a side.
Place on a baking sheet, and put it in a 400 degree oven for 8-10 minutes
When finished, top with some tomato sauce! I added some meatballs, and spinach! Yummy!

- 3.0 Small eggplants
- 3.0c Panko bread crumbs
- 3/4c Parmesan cheese
- 1.0Tbsp Garlic salt
- 1.0tsp Onion powder
- 4.0 Eggs
- 1/4c Half and half or milk
- 1.0c Flour
- Tomato sauce
- Meatballs if you like!
- Salt and pepper to taste
