So today I decided I wanted to make something with cherries, as a welcome home gift for my parents. So I created these. I call them cherry cobbler bars. They are to die for. Make them and comment!! :)

INGREDIENTS
Pick your cherries. I have a tree, I actually fell out of it trying to get these cherries. But the cobbler was so good it was worth the scrapes I got. ;)
Pit your cherries! This takes forever but stick with it! (I listened to spotify, on my iPhone.)
Stir cherries in a pot with lemon juice, cornstarch, and 1/3 cup sugar. Cook till cherries are soft.
Put butter, sugar, vanilla and salt in mixer, cream together. Slowly add in flour. Stir until just combined, press into the bottom of a greased pan.
Add cherries on top. Spread it all out evenly with a rubber spatula.
Bake for about 25 minutes, at 350 degrees Fahrenheit. Have a slice to make sure it's all the way cooked through. Don't over bake!
Dust with powdered sugar and sprinkle with coconut (if desired).
Cut into bars. Eat 5, because you won't be able to stop yourself.
Save some for your parents, because this was supposed to be there welcome home gift after all. ;)
