A bit quicker method using canned beans. The cost is still low (less than $2) for the beans. Serve with homemade bread or biscuits = a hearty comfort meal.

Line casserole dish with tin foil and spray with a bit of oil (easy cleanup!)

Add 2 cans of black-eyed peas drain one can use most of the 2/3 of the liquid from second can.

Add a sliced onion and some bacon cut into pieces.

Add 1/2 cup ketchup, 1 tbsp brown sugar, 1/3 cup molasses, tsp prepared mustard, 2 tsp vinegar, sprinkle of salt and pepper.

Stir well, cover and bake in oven at 350 for about 1 1/2 hours (add water if looks too dry). Uncover and bake additional 15 mins.
