Fry your fish first, don't waste the used oil keep it for the next step
Chop a bunch of onions and tomatoes
In decent chunk sizes
Add your onion first let them sear until they transpire
Add salt and pepper
Add your tomatoes
Mix together like so
Add your fry fish try to delicately pour some of the tomatoes and onion on top of it
Like so let it sear on medium heat for 15 minutes
Turn off the fire and squeeze a whole lime on top of it and it should be ready to eat
Delicious and fairly healthy .eat it with rice or couscous
