Place the butter/margarine in a bowl , I used part white caster sugar and part golden caster sugar purely because I had ran out of plain white.

I used a hand whisk to cream them together until paler and creamy, scraping down the sides regularly

Place into preheated oven at 180c for 20 mins

The end result, with the jam filling and dusting of icing sugar. Simple and delicious. You can use anything you want for the filling, I choose homemade strawberry conserve.

  • 6oz butter or margarine
  • 6.0oz caster sugar
  • 3.0 eggs
  • 6.0oz Self-rising flour
  • 1.0tsp Vanilla extract
  • Jam of your choice for the filling
  • Sprinkle of icing sugar for decoration
