How to make a tamarind cocktail
Tamarind is a perfect match with tequila balancing the cocktail with a sweet and sour component.

INGREDIENTS
This is a dried tamarind pod. I picked them up at a Mexican market, you can also find them at Asian markets. Buy them in the bulk bins, look for intact shells.
The dried shell cracks apart revealing the fruit. Remove as much of the shell as possible, don't worry if you miss some little pieces.
Remove the root structure. At this point you can eat them. Just watch out for the rock hard seeds!
I soaked the pods in boiling water for 20 minutes to soften up the pulp.
Once soaked drain off the water. They really look like poop but taste incredible!
I squeezed out the pulp through a fine weave cheese cloth but you can just use you hands, just put a pod in your hand squeeze your hand into a fist and the pulp squirts through your fingers.
Once you have the thick pulp separated water it down slightly. I added maybe 1-2 tbsp of water.
Add some simple syrup to the concoction.
Stir and wait for simple syrup to fully dissolve in mixture.
Add tequila
Fill glass with ice, top with club soda and Enjoy!
