This is a pretty cheap meal to make for a family. Most of this stuff people typically have in the pantry/fridge, but even buying all the stuff, I spent less than $20..
Make a batter with the muffin mix, cream corn, chiles, egg, milk, 2 T of the taco seasoning and a handful (1/2 c) of the shredded cheese..
Preheat your oven to 425 and find a vessel big enough to hold your batter in an even layer that's not too thick. It will puff slightly in the oven.. Meanwhile, remove the meat from your bird..
Pop your crust in the oven for 15 minutes to set.. Meanwhile, throw the jar of salsa, 2 T taco seasoning and a handful of cheese into your chicken. I tossed in a couple green onions because I had them
At this point you could throw in any additions you want. Olives, corn, black beans, etc, to make it more substantial.. But I think it's best when you keep it simple..
Mix a dollop of sour cream with just enough milk to thin it out enough to drizzle. Yea yea, my pop drinks goat milk but it was all we had at the time.. It doesn't taste as bad as it sounds..
When your crust is set, layer half your chicken mix, a handful of shredded cheese and a drizzle of the sour cream on top. Then add the other half of chicken and cheese..
Pop her in the oven for 15 minutes and in the meantime, go find something else to do..
Take your masterpiece out after the cheese is melted and bubbly.. Let her sit for abut 10 minutes to set before you get into it..
Slice off a nice square of this culinary orgy of flavor and garnish as you like.. I added some sour cream, cotija cheese and avacado. Awesommmmmmme..
Enjoy while making "mmmm" sounds and watch as your slut dog sits staring in envy..
