Make a Smooth Summer Salad With Chicken


Cut chicken breast in half, width wise , season with salt and pepper and grill or bake until cooked through. Cut cooked chicken into small pieces and put in freezer to cool

While chicken is grilling/baking, prepare 2 corn ears to be boiled. Boil for about 2 minutes. Remove from Heat,drain, and cut corn from ear. Place cut corn in freezer.

Dice vegetables (tomatoes, peppers, you could throw in some more, and place in large bowl.

Place beans in colander and rinse. After rinsing, put beans in with other vegetables.

Juice lemon and mix with 2 tbsp of olive oil. Mix cumin and paprika in with lemon juice and oil. Set aside

Remove now chilled chicken and corn for Freezer and combine with the vegatables. Pour lemon-oil mixture on top and stir.

  • 2 chicken breasts-boneless
  • 1 can black beans (I believe about 14oz)
  • 2 peppers (colored are sweeter)
  • 2 ears corn
  • 2 garden fresh tomatoes
  • 1 lemon, juiced
  • Cumin to taste
  • Paprika to taste
  • 2 tbsp olive oil
