How to make a simple yet delicious pineapple chicken!!!

Okay I'm a huge chicken fan but this is the BEST way to make a nice chicken that the whole family will love. I serve it on top of rice and always a side of broccoli.

Get your supplies! Now I was going to use a red and green pepper because you can really use any pepper on hand but I actually ended up switching last minute and using two green peppers.

Get your oil hot and begin to fry your chicken.

Once it's done allow it to cool and cut it up into bite size pieces. Place back into the pan and set aside.

Cut up your pineapple now, I use half the pineapple and cut it up into nice little pieces and then the other half I mix in the blender and make fresh pineapple juice.

Add the first 9 Ingredients in a sauce pan. Including the pineapple juice and chucks. Stir until smooth.

Place on medium heat. Bring to a boil; cook and stir for 2 minutes or until it's thickened.

Place sauce into the large skillet where the chicken was. Allow this to cook on a simmer for about 15 minutes it just allows chicken to marinade in the pineapple sauce.

While that's simmering chop up your green peppers they need to be pretty thick but in small/medium pieces shown above.

Place in the skillet for 5 minutes to slightly cook the peppers. They will end up slightly cooked and crisp not mushy.

And your done!! Place the pineapple chicken over some white rice I like to do a nice side of baked lemon broccoli with this dish you can see my guide for that :)!
