Sweat off (release flavour) vegetables in olive oil on a low heat for approx 10mins.  Stir occasionally to avoid colouring or burning.

Add vegetable bouillon, bay leaf, thyme & sea salt/pepper to taste.  Turn up heat & cook for 15mins or until vegetables are tender. Tip: you can add 1/2 cup rice if a thinker consistency is desired.

  • 1.0 Medium onion
  • 2.0 Carrots
  • 3.0 Small Sweet potatoes
  • 4.0 Thyme stalks
  • 1.0 Bay leaf
  • 1/2c Vegetable bouillon
  • Medium Saucepan
  • Spoon
  • Blender
  • 1/2c Rice (optional if you want a thicker consistency)
  • Sea salt & ground pepper to taste
