Separate & coarsely flake the sardine meats from the sauce (reserve sauce for omelette)
1.)flaked sardines 2.)beaten eggs 3.)chopped onions, green onions & cilantro.
Heat oil in a frying pan then sauté onion
add in the flaked sardines and stir cook for 3 minutes or until most of the liquid has evaporated.
add the chopped cilantro and stir
Pour in the beaten eggs and mix thoroughly.
Add chopped green onions & stir
pan fry mixture for 3 to 5 minutes
transfer the sardine omelette in the plate
Cut the Pandesal in half. Then add the sardine omelette & cheese. Pour the sardine sauce over the omelette.
Serve it with your favorite fruit or chips.
Optional: add 1 over easy egg on top of omelette & more sauce
