How to make a sandwich spread with leftover salmon

Open style sandwiches on rye is a big part of the Danish food culture. Use any cooked fish and any odds and ends of veggies. Use sour cream instead of mayonnaise if you want to reduce the fat intake.

Deseed the tomatoes, chop everything fine. Save some of the leek and tomato for garnish. Stir everything together add salt,pepper, lemon zest and juice to taste. You can use any cooked fish.

This is an open sandwich on rye. It is going in my husbands packed lunch, so I placed some salad leafs under the spread to prevent the bread to go soggy.

  • Leftover fried salmon
  • 3.0Tbsp Mayonnaise
  • 1.0tsp Mustard powder
  • The green part of a leek
  • Some tomatoes
  • Half a yellow pepper
  • Zest of half a lemon
  • Juice of half a lemon
  • Salt and pepper to taste
