To keep hard veggies fresh I place a damp paper towel on top.

We like a lot of variety so I have pickles, mushrooms, red onions, olives and other treats cut up and ready to go too. I don't pre-cut tomatoes or cucumbers though since they don't hold up very well.

Grab the tray and some greens and you can throw a salad together in minutes after work! I find things hold up for at least a week. It doubles as a great stir-fry short cut as well.
