How to make a "rachel" sandwich
A variation on the beloved Reuben, this grilled turkey, cheese sandwich topped with cool slaw is sure to be a crowd pleaser any night of the week!

Place the slices of bread out on your work station
I like to make my own 1000 island but you can definitely use the bottled kind. I just figure since it's as easy as mayo, ketchup, and dill relish, why buy it?
Start with equal parts of each item.
Stir to combine well. Then taste. Add more of what's lacking until it tastes the way you like it. Stir and done!
Spread the dressing out over each slice of bread. Don't glob it on. Just a thin layer will do.
Add Swiss cheese to each slice
Add 2 slices of turkey to 4 of the slices.
Butter your pan and have it heating.
Place about a cup or so of the premade slaw into a mesh strainer. Press to remove a lot of the liquid. You don't want a soggy sammich.
See all that liquid? That would have made the bread awful.
Put a couple of spoonfuls on top of the turkey and spread it out.
Put the top on the sandwich and carefully place the sandwiches in the pan to cook. You may want to do 2 at a time but since I only needed 3 I could do them all at once.
Flip when it's golden brown. Add butter to the pan again before putting the new side down. Make sure both sides are toasty and the cheese is melted.
Serve with regular potato chips and a big garlic pickle. YUM!!! Just as good as any deli in my book!

- 8.0 Slices of Rye bread
- 16.0 Thin slices of smoked turkey
- 8.0 Slices of Swiss cheese
- 1000 island or Russian dressing
- Premade coleslaw from the deli
- Butter
- Lays regular potato chips
