pre-measure and scale ingredients preheat oven to 350
With an electric mixer, beat the eggs, granulated sugar, pumpkin, & lemon juice until smooth
Sift together flour, ginger, salt, baking powder, & cinnamon
add to mixer and blend until fully mixed
Grease and flour pan
spread batted in jelly roll pan
put in oven and cook for 14 min
sift powdered sugar into 2 clean towels
invert cake onto towels
roll the cake up into the towels (cool in fridge for 45 min)
combine confectioners sugar, cream cheese, butter, and vanilla
stir until smooth
spread mixture onto unrolled cake (spread evenly)
roll up cake (cut off sides if necessary) dust with powdered sugar
