Boil the bulgur. If you wish to stay away from wheat products use quinoa instead. Works wonders. When cooked rinse in cold water.
Peel the prawns. These are pre-cooked and ready to eat.
Prep the dressing. Zest/grate the lime peel.
Juice the limes.
Add the lime juice to the bowl.
Add sweet chili sauce.
Stir. Add both oils and sweetener.
Add the chopped basil.
As well as the chili. Stir and adjust flavor to your liking.
Chop the spring onions and add them to a large bowl.
Add diced mango.
Add the boiled and rinsed bulgur (or quinoa).
Add the prawns.
Add the dressing.
Serve, preferably with a glass of white wine.
- 300.0ml Bulgur
- 1.0 Mango
- 2/3 Cucumber
- 200.0g Prawns
- 100.0g Spinach (fresh)
- 3.0 Spring onions
- 2.0pch Lime peel
- 6.0Tbsp Lime juice
- 2.0Tbsp Sweetener (I used agave)
- 100.0ml Chopped chives
- 4.0Tbsp Basil
- Chili fruit
- 1.0Tbsp Sweet chili sauce
- 1.0Tbsp Canola oil
- 1.0Tbsp Sesame oil (try with less first)
