Put all ingredients for the pesto in the blender

Blend until smooth (but still thick and creamy).  Put in a jar (I always make a big portion of this - can be used as a vegan spreadable on for example whole wheat toast, crackers).

Toast the bee pollen on low-medium heat for 2-3 mins (be careful - do not want to burn this).

Cut the goats cheese into slices ( I had 6 slices) and put on top of the salad. Drizzle the bee pollen on top and serve with pesto. Enjoy 😋

  • 10.0 Green olives
  • 2.0Tbsp Bee pollen

  • 1.0 Avocado (small)
  • 1/2c Walnuts
  • 1/2 Lime
  • 1/4 Garlic
  • 2.0Tbsp Water
