Sift your flour, bicarbonate of soda, ginger and cinnamon into a bowl

Rub in the butter, one of my tricks is to shake the bowl and watch those pesky lumps float to the top... It's magic!

Roll it out till 1/2 a cm thick, I'm doing it half the dough at a time

You should have; two roof panels, two sides, two front panels and some spare dough for other diabolical desserts (angels, candy canes, shooting stars...)

Bake at 180 degrees or 350 degrees Fahrenheit, just until golden brown... If it burns you'll be left to weep at the little remaining frazzles!
