Garlic Scapes is a seasonal product which can be found at a local farmers market during late spring and early summer. Most grocery stores won't carry them.
The whole stem of the Garlic scape can be used with exception of the pod. Chop off all pods and discard. Then chop remaining Scapes small enough to fit in a high speed blender.
Add your Garlic Scapes into your mixer.
Chop down your chives.
They don't need to be chopped too small. Just small enough to fit in your blender.
Chop up a whole red pepper insides removed.
Add all your chopped ingredients into your blender and add extra virgin avocado oil.
Add your dried garlic or crush fresh garlic into the blender.
Blend on low speed to start. You may need to periodically scrape the edges to force the ingredients stuck on the sides into the mixture. Depending on your blender, it may take 1 to 3 minutes to blend.
Your sauce will resemble this photo when desired texture is formed. This sauce works best with white meat based proteins like chicken or turkey.
Coat your meat with the sauce and steam cook it, or marinate it over night to really pull in the flavour. Sauce can freeze up to 3 months.

- 1.0 Red Pepper
- 1/2 Extra Virgin Avocado Oil
