Firstly clean and chop 1 green and 1 red bell pepper, 5 mushrooms (middle out) 4 spring onions, 1 large tomato and a handful of parsley

First melt a big spoonful of butter in a saucepan and add everything except your mushrooms. Save some parsely to garnish.....

After 5 minutes cover with a lid so that the veg can soften...

Next chop your ready cooked sausage. I'm using a spicy Turkish sucuk which is like a beef chorizo And add to to the veg pan. TIP: if you prefer a crunchier sausage, don't add it yet...

After about 8 minutes in total all the veg and sausage will be softened ready for the quiche.

Whisk together 1/4 cup of cold water and 1/4 cup of olive oil...

Add 1 cup of plain flour and a pinch of salt...

Knead together into a dough. This dough is very fluffy and so easy to make....

Roll out your dough and place your dish over the top. Cut around the dish leaving a cm or so.  TIP: use a pizza cutter it so much easier :)

Next grease your dish with butter...

Add the dough to the bowl.  TIP: to stop the dough from ripping,  try and lightly roll the dough up around a rolling pin and then unroll over the dish. I do this trick and the dough never rips!.

Place grease proof paper over the top and press down and add some old coins to stop the dough from rising.(Today I'm using foil and pebbles) Cook the dough for 15mins at 180c in the middle of the oven

Whilst the dough is baking add 4 eggs and 1 cup of milk to a bowl and whisk. Add pepper and 250g of grated cheddar cheese.  TIP: Add more or less cheese depending on your taste.

Next add your veg to the mixture and gently fold together...

The pastry is ready....  TIP: You can test with your finger if the pastry has hardened. If it is still doughy add back to the oven.

I topped with chopped mushrooms, sliced tomato, parsely  and black pepper and extra cheese :) Place in the middle of the oven for 25 mins on 180c.

TIP: stab with a knife to see if the quiche is ready. If the knife is clean it cooked through. If not add back to the oven and repeat this process after a few more mins.

Delicious! There are so many different varieties to try. Here are some of my favourite: *english breakfast with sausage, bacon and tomato and topped with mushrooms. *ham and tomato *leek and broccoli

  • For the filling:

  • 5-6 cooked sausges of your choice
  • A large spoonful of butter to cook
  • For the pastry:
  • 1/4 cup of ice cold water
  • 1/4 cup of olive oil
  • 1 pinch of salt
  • 1 cup of plain flour
  • For the quiche:
  • 4 eggs
  • 1 cup of milk
  • 300g or more/less of Cheddar cheese
  • For the topping:
  • 5 sliced mushrooms
  • 3-4 slices of tomato
  • More cheese to sprinkle (optional)
  • Black pepper (optional)
  • Some more chopped parsley
